Zucchini and sweet potato frittata

  • 4 eggs
  • 1 zucchini, sliced

Put coconut oil in pan over medium heat. Cook sliced sweet potato for about 5 to 7 minutes. Put zucchini and diced bell pepper and cook for another 2 to 3 minutes. While cooking, beat and aerate the eggs. Add salt and pepper to the egg mixture according to your taste.

Pour egg mixture over the cooked vegetables. Set stove to low heat and cook for around 10 minutes or until you reach desired texture.

  • 1 large cabbage, sliced into 1-inch-thick pieces
  • 5 large cloves of garlic, minced
  • 3 tablespoons of extra-virgin olive oil
  • Salt and black pepper to flavor



Preheat oven to 400 degrees. Generously brush all the cabbage slices with olive oil on all sides, even top and bottom, but don’t soak.

Place cabbage slices in a pan and place minced garlic evenly around them. Season with salt and black pepper accordingly.

Cook in oven for around 20 minutes. Turn the cabbage slices over and roast for another 20 minutes. Cook until crispy. Serve while hot.

Grilled portobello mushroom burger

  • 3 pounds of slightly fatty ground beef (important to have a juicier patty)
  • 6 large pieces of portobello mushrooms
  • 3 eggs
  • 4 cloves of garlic, minced
  • Olive oil (amount depends on the size of the mushrooms)
  • Salt and black pepper to flavor



Combine the ground beef with the eggs and mix thoroughly. Season with garlic, salt, and pepper accordingly. Make about six patties that are a little smaller than the mushrooms and set side.

Wash the mushrooms but don’t soak. Let them dry and pat to keep them crunchy. Cut off the stems to make them resemble a burger patty. Generously brush the mushrooms with olive oil on all sides, including top and bottom.

Cook the patties and mushrooms on each side for around 6 to 7 minutes on a preheated grill. Place the patties on top off the mushrooms. You can add some vegetable toppings if you like.
